So St Pats was a very tough week. I made St Pats day mini cupcakes and those 2pts went quickly into 22pts. I mean look at these nummy cupcakes?!
Sugar is the devil I have discovered. Hence 2 pt quickly went to 22 pts.
Also we had an amazing corned beef at work that was so good it was worth going off my diet. Seriously the best. corned.beef.ever. They cooked it in Killians beer. First 'beer' that I had on WW diet. But it was awesome!
But I had to get back on that WW wagon and a lot of that is embracing preparing your food for the week on the weekend- or at least that is the easiest way for me to managing it.
So I hacked this recipe into my own because I have discovered I need protein every morning to get going. I made this with scrambled eggs, sprinkled a little 2%cheese and popped a ' surprise!' In each one. (I.E. chicken and pork Johnson maple flavored breakfast links- 4 links equal 5 pts)
I poured the batter into a mini cupcake tin and cooked it for 20 minutes at 350 degrees
Here is the SURPRISE! Result. Nummy.

the little surprise eggs.
Now i am set for the whole week! I believe these might be 2 - 3 points but I am still building it on recipe builder.
